The restaurateur behind by the successful Bill’s chain has spoken of his excitement at opening an eatery in Eastbourne.

Bill’s, an award winning chain of restaurants and greengrocers, is opening in the former Terminus Pub premises in Terminus Road within the next few weeks.

Work is underway on restoring the building and staff are currently being recruited.

Bill Collison, who founded the company and started it from a shed in Lewes, said he was looking forward to the opening.

“Eastbourne has been winking at me for a long time to open a Bill’s,” said the founder.

“I wanted to get it right – find a great location – which we have now done. Formerly a pub, this building right in the middle of town is a gem for us and we’ve been unearthing all sorts of original features.”

Bill’s is well known for its breakfasts, lunches, afternoon teas and dinners as well as fresh and seasonal food.

Bill said, “I’m hoping the restaurant will be a real hit with the locals. What’s unique about us is the effort we put into everything. The food of course, but also staff training and me going to auctions and antique fairs, hunting out pieces that will work with the Bill’s atmosphere.

“Also, it’s got personality, its own feel. You can’t buy that or fabricate it. It happens if there’s love. Love and persistence.

“Our staff are friendly and there to make sure you have a good time and the atmosphere is relaxed and welcoming.

“Open all day, Bill’s slips seamlessly from first thing to late at night, serving breakfast, mid morning coffee and cakes, lunch, afternoon tea and supper.

“Whether you want to sit quietly in a corner with your laptop or celebrate a birthday in style, we will make sure you have a good time.”

The Terminus closed in October last year and owners Harvey’s said it was due to the economic climate hitting pubs. Hoarding went up around the building last month.
